I would go for it and try that smoker idea experiment.
If you restrict the air into the firebox and damper off the top, you can produce and confine LOTS of smoke and not much heat. Of course it would take some experimentation and practice.
If I build an outdoor oven, I may incorporate your idea as I have wanted a smoker for years to smoke fish caught in my river. It would be nice to have an outdoor stove that can bake bread and also double as a smoker.
