Hardening of Outdoor Oven clay?
From the WFO board
Posted by Robert Richard
Hello again,
In the area, there are a few owners of Traditional Outdoor Bread Oven, the Canadian type, beaver shape clay dome. These builder s say that the first 2 weeks, the dome needs to be hardened by daily natural sun temperature; then the 3 and 4th week, the oven is fired from a small size fire to a full fired oven towards the end of the 4th week. In total, there is a 4-week process to harden the dome clay.
In this period, there is no cooking. Does it make sense to have such a long period of time for the clay to harden?
