I like your idea about using a gas grill as well. Fire bricks should make a difference. I often use my gas grill as a make-shift oven. I am about to build a small oven (CD from Rado. r)
Till you get your own wood oven, to get that smokey taste, try making a small pouch out of tin foil with soaked wood chips. Poke a few small holes in the foil and toss it on a few minutes before you put the pies on. Let the grill chamber get a little smokey.
Add pizza. I use fruit wood for a little sweeter taste. Nice contrast with tomatoes. Yum!
