The IR thermometer measures surface temps. The top the the vault (inside oven) was 350 deg. C. There were lots of cold spots around (sides and base ~ 180 to 200 deg. C) I figure this is partly lack of insulation but also just the nature of a wood fired oven. Rado may want to comment on this.
I am adding the insulation (Vermiculite #3 granule size) this weekend and will take some more reading after and will let you know.
