Things are going well as I can hear. All the best with cooking!
Apart from buying ready mixed finish mix, own made @ home regular mortar using coarser sand with Portland cement will do well too. Don't mix too wet and apply onto chicken wire, as it progresses to dry smooth it with metal tool till hard, it avoids cracks (this goes above the insulation layer, 2-3 newspaper pages in between, insulation absorbs expansion.) At the end just paint it with lime mixed in water into thick consistency, at first it'll need about 3-4 coats but then it can be repainted at any time by just one.
Sand : Portland cement -> 4:1
for 1" - 2.5cm or if thicker layer was allowed ...
Sand : Portland cement : Lime -> 6:1:1
