Ventilation

I am currently in the planning stages for a pizza oven. In looking at your plans and those from other sources, I seldom (if ever!) see any mention of ventilation for the entire upper area under the roof.
If this was a house, there would certainly need to be ventilation provided at the top of the peak under the roof. It seems as though this would be highly desirable in the event that rainwater managed to leak below the roof because of problems with flashing around the chimney or whatever.
Is this just not needed in a pizza oven, and, if so, why not? Is this just a theoretical worry?
