Oven turning white

I have a question about the oven turning white. When I fired up my oven all three times to pizza cooking temperature(600 to 700 deg F), the oven would only turn white above the flame. The rest of the oven was still black.
My oven dimensions are 41" x 36.5". What am I doing wrong? Do I need to build a bigger fire? Is it the temperature that turns the oven white? What temperature should an oven be at, for it to turn white? Does the insulation layer help? I am using oak to build my fires. The bark is still on the oak.
