When you ask "What do you think about how I measure temps @ cooking activity?", I think that you have really prompted me to think long and hard about just what I would be measuring. As a scientist I just love numbers, but in this case your reasoning is just so sound that I am going to forgo the thermometers.
Many thanks for the prompt feedback, as I will be laying my hearth slab tomorrow. Cannot wait to start cooking!
