Hi Chris,
Using fireclay in the mortar mix will make it refractory. The fireclay will be able to withstand the heat generated from firing and not degrade. If you design the vault well, the bricks will almost be self supporting with the mortar acting as wedges to lock it all together.
I don't know if you are making the oven with Rado's plans but if you are, have a look at photo zc5. There is a small gap between the oven and the entrance which allows for expansion. The oven only expands by 1 or 2 millimetres in entirety and if this is catered for, everything should be OK.
