I actually have the reverse problem with my sour dough starter. It doesnt really rise at all during fermenting/proofing. But when I put it in the oven, it just about doubles in size. It is almost enough of a rise, but it is still a little dense. Perhaps I did not make the starter correctly? I followed the recipe in "The Bread Builders"
