Hi Bob,
You know those cold winter mornings when you wake, snuggled deep inside the blankets and then have to get out of bed? Just think how quickly you get cold without the thermal layer. Well the insulation acts like blankets or clothes trapping the heat where it's required.
If you don't insulate, you will loose heat and the outside of your oven will be far too hot to touch. If you want to do extended cooking, you should go to the trouble and insulate. I think that if you don't, you will wish you had.
