Phil, have a look at these pictures of fires in wood burning brick ovens. Then browse around the site, there are more photographs of meals in ovens. Usually, when you bake breads the fire is stoped, embers and ash taken out or if dome is not too hot, it can be put to a side. While making pizzas you can keep small fire in for a long time.
