Many thanks to your comments, I have gone to work flattening my hearth. I never would have used woodworker techniques until I heard from you. I chose to use an "easy" method and just used a belt sander on the uneven bricks. It went wonderfully! While this wears down the sandpaper faster than wood, it still went quite fast and pruduced quite a flat surface.
Again many thanks, because I never would have used woodworking techniques without your assurance that the firebricks could be flattened. OK, it's on to the dome tomorrow........!
