I haven't seen to much opinion around on what would to use. I don't think it maters particularly (they will all burn if you leave them in the oven to long :-)
I used american oak since thats what I had lying around. I had thought about using plywood but am unsure if the glue would have any affect.
FYI I roughly followed the plan shown here:

I was thinking next time to use a jig and my thicknesser as the router was hard work (ie took me 1 hour solid routing)
