Like with a heat exchanger of course go for it, copper is perfect! Either for hot water shower or for heating copper pipes may be directed to different rooms in house. But why wouldn't you incorporate it into single oven and using it with all features at once?
You can easily line up the chimney and hood with hot air passage with copper on inside but leave cooking/firing hot face area made of firebricks. r
