Well, yes, you certainly can make the walls out of wood. I can assure you that it would be much, much easier than using 26 gauge steel framing members, but there is one downside to using wood - it can burn. With my oven in our back yard in a residential neighborhood, I have been absolutely paranoid about making sure that the oven fire was completely contained. This meant using steel framing members, cement board sides, a steel roof and a spark arrester on top of the chimney flue.
While wood would have been much easier, the peace of mind I have in knowing that there is absolutely nothing flamable in the whole structure is worth a million to me.
