Pour it at once. Mix the concrete not too wet (always for any concrete less water better results.) Spread it and wait till it starts to set, as the concrete is setting smooth it, just quickly couple of times. As concrete is hardening/curing the smoothing stops drying cracks to occur.

PS Your progress is quite fast, even though you mentioned you had no initial experience!
