Extra cladding for small oven

Dear All,
I am thinking about building a small bread/pizza oven INSIDE our house, using an existing inglenook fireplace. Because of space limitations, I am looking to build an oven with a hearth floor space of only about 24" x 30". Would this work? If I increase the concrete cladding layer to say 6"-8" and insulate any remaining space with vermiculite, would the oven hold its heat long enough for say a roast and a few loaves?
Any thoughts and advice would be most welcome.
