Sounds very good ;o), you know how to heat up the oven well. If you do pizzas tonight; just wait for the floor to cool down a bit. it's just a high temperature. Later on, after 3 firings you will not need to test the atmosphere inside at all, can be seen with just a quick look inside. Or next time you can throw cornmeal onto floor to see if it burns fast, or a small piece of newspaper shows the same - should get dark brown color and not fast.
*** I will be back tomorrow, and will describe how we practice placing pizza/bases inside right onto the brick floor and using no cornmeal. Or how to get ash-dust off the floor perfectly and easy, for all those who are too picky about it (I am not ;o) r
