I am not sure that I understand your question right, because you write "instead of brick" - and then state that you WILL use firebricks...
Do you plan to use granite on top of the firebricks, below the firebricks or...?
In any case I would advise against it as I don't think granite is very heat tolerant. I saw a similar question in the Yahoo brick oven group a few days ago, and this is what Pat Manley answered:
"Please do not use granite for your oven deck. It is not a refractory material and is not heat tolerant and will shatter upon exposure to the temps in the oven. If you want to use stone for the deck, use a sheet of at least 1 1/4 inch thick soapstone, a natural refractory material. Some people use a sheet of marble, but I have had sucess with soapstone."
