Chimneys

Hello, I want to build a traditional oven. I was just wondering if my oven will need a chimney? By looking at the pictures dome ovens don't have chimneys but a vent just outside the oven door.
But other square ovens do sometimes have a chimney. I was wondering if someone could explain when chimneys are used in ovens and why? Does it have something to do with size or what you are burning?
