Might I suggest, if you haven't already, look at a good "cookbook" about baking bread. "The Bread Baker's Apprentice" (found on eBay or at the library) is an exceptional book on the art of baking. Great recipes for bread dough. I believe you can easily adapt them for a wood fired oven. Also lots of great threads on this site about baking, check them out! This site rocks!
