As you say a wooden template of desired shape can be created and then lay bricks on top. Or even better and faster; do first the radius line on both front and rear wall and then you will just use brick laying string to mortar bricks in layer. One line of bricks on one side then one line on the other while the previous sets - and you will have to do the job in two days finishing the center in second day. If it will hold (?), yes it will as it's held in 4 sides.
If you did the top arch with a low arch rise or of a large surface area, e.g. 2m x 2m plus, then the walls that hold the arch must be strengthen with reinforced concrete all round in the place where you start with building brick arches. Just before arches are finally closed pour in heat insulation in loose form.
Calculate arch radius the way that you won't need to cut building bricks to fit in the last line. r
