I baked all last winter in my exposed oven, it was a lot harder on the cook than the bread! I live in the Ottawa Valley [Canada] and only missed two weekends due to blizzards. Other than starting a small fire of birch and poplar to take the ''chill'' off I didn't do anything different. The flat-breads I cooked with the door plug in, no fire, just residual heat.
