I am no expert but have been using my oven for a couple of months now and have found the following useful.
For tools, I have a cocoa brush attached to a broom handle for sweeping the hot floor, an aluminium peel, and a garden hoe for moving the fire and coals around.
The cocoa brush doesn't burn and only cost a couple of dollars from the hardware. As far as cooking accessories, I have used disposable aluminium trays but I think ceramic ones would be best for slower cooking or roasts.
