Hi there,
I don't have first hand experience with this but I have heard that soapstone can transfer too much heat to the bottom of your loaves, burning them before they are fully cooked. But I do not see why such a problem should exist. I guess it depends on how you are going to be using the oven. But have you seen this page with some very useful information for building soapstone hearths?
The thermal properties, heat retention and heat energy conduction of soapstone are perfectly explained on that page so things make sense to me.
